French Dip Sandwiches

1 2.5-3 lb beef roast
2 Tbsp olive oil
Salt & Pepper to taste
2 one ounce packages dry onion soup mix
2 cups water
2 cans beef broth
6-8 large buns
Swiss, provolone, or mozzarella cheese.

Rub roast with salt & pepper.  Add oil to pan and sear roast on all sides.  Add to crock pot and add soup, dry onion soup packages, water and beef broth.  Cook on high for 4-5 hours or low for 7-8 hours.  Meat should fall apart at the touch of a fork when cook time is done.

Shred meat and add to buns and top with cheese.  Broil until just brown around the edges.  Ladle juices from the crock pot to dip in & enjoy!  So easy & sooo good!
