Easy Chocolate Chip Pumpkin Bread

It's about that time of year & I've been digging out all my fall recipes. Here's a quick & easy favorite that goes really fast in our home!


Ingredients

3 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
4 eggs
2 cups sugar
2 cups canned pumpkin
1-1/2 cups canola oil
1-1/2 cups semisweet chocolate chips ( I like the big ones or the chunks)

Directions

In a large bowl, combine the flour, cinnamon, salt and baking soda. In another bowl, beat the eggs, sugar, pumpkin and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips.

Pour into two greased 8-in. x 4-in. loaf pans. Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Makes 2 loaves (16 slices each).

Whole Wheat Bread

This is a super easy bread recipe that tastes awesome, even though it is whole wheat

15 c. wheat flour
6 1/4 hot tap water (about 110 degrees)
2/3 c. oil
2/3 c. honey
2 T. salt
3 T. yeast

Combine water, oil, honey, and salt in a large mixing bowl (you'll want to use an electric mixer like a bosch or a kitchen aide). Add 6 c. flour and yeast. Mix for 1 minute. Add the rest of the flour. Mix for 8 minutes. If too sticky, add more flour. Shape into loaves and put in the oven for 30 minutes at 170 degrees to rise. Take out and preheat oven to 350. Bake for 25 minutes. Remove from pans and butter the tops. Enjoy!

Cheesy Corn Muffins

My friend Sarah shared this recipe and it is so yummy! The muffins are moist and flavorful, and the recipe is so easy!


1 C milk

1 C low-fat cottage cheese

2 eggs

½ C packed cheddar cheese (about 2 oz.)

2 pkg (8.5 oz. each) corn muffin mix


1) Preheat 400. Line 18 muffin cups. Combine milk, cottage cheese and eggs in large bowl. Use an electric mixer to blend on medium speed 1-2 min.

2) Stir in cheddar cheese, then stir in muffin mix just until blended. Don’t over mix

3) Bake 13-15 min. or til light brown and clean toothpick
