Pancakes

I ran across this recipe a month or so ago on the All Recipes website and let me just say...they are the BEST pancakes I have ever had!  They kind of remind me of sugar cookies, only in pancake form. I promise once you try them you will never go back to the store mix.  They are that good and sooo easy!

 

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. 

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

HOMEMADE blueberry muffins


1 cup flour
1/2 cup sugar
1 TBSP baking powder
1/2 tsp salt
1 egg
1 cup milk
1/4 cup salad oil
MIX WELL

FOLD in 1 cup FRESH blueberries.
Bake in a muffin tin at 400 for 25 minutes

Egg Soufle

This is something I always had growing up on Easter Morning and Christmas Morning. My mom served it with the yummiest pull apart rolls! Such good memories!

Ingredients
7 Eggs
1 LB Sausage, browned, drained, and sliced
1 tsp Salt
2 C Milk
1 C Grated Cheddar Cheese
1 tsp Dry Mustard

1. Line greased cake pan with white bread, crusts removed. Sprinkle Sausage on top.

2. Mix Eggs, Salt, Milk, and Mustard until combined, stir in cheese. Pour over the top of bread and sausage.

3. Refrigerate overnight. Bake in preheated 350 degree over for 45 to 60 minutes. Let cool before serving.

Buttermilk Pancakes

These are seriously the BEST buttermilk pancakes ever & so easy to make.

2 cups all purpose flour
4 tbs sugar
2 tsp baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
1/3 cup milk
2 large eggs
1/4 cup butter or margarine (melted)
Butter, vegetable oil or shortening for frying.

1 - Combine flour, sugar, baking powder, baking soda and salt in large bowl. Whisk until blended. Combine buttermilk, milk, eggs and melted butter in a medium bowl.  Whisk until blended.

2 - Heat large non-stick griddle over medium high heat.  When griddle is hot, add buttermilk mixture to dry ingredients, then stir batter just until blended.

3 - Reduce heat to medium and grease griddle with butter, oil or shortening.  Using a ladle or 1/3 cup dry measure, pour spoonfuls of batter onto griddle and cook until bubbles form on top (2-3 minutes).  Flip and cook 1-2 minutes more, until browned. 

*Makes about 14 pancakes.
