Skillet Lasagna

1 pound ground beef (or turkey)
1 small bell pepper, chopped (1/2 cup)
1 small onion, chopped
2 cups cups cooked mafalda (mini-lasagna noodle) pasta
1-1/4 cups water
1/4 teaspoon Italian seasoning
1 jar (14 ounce) pasta or Marinara sauce
1 jar (4.5 ounce) sliced mushrooms, drained
1/3 cup shredded mozzarella cheese

Cook ground beef and add onion and bell pepper.  Saute until tender.  Stir in remaining ingredients (except for the cheese).  Simmer, uncovered for 12 minutes.  Top with cheese & serve.  Tastes awesome with garlic bread and a side salad.

*NOTE:  I couldn't find the mafalda noodles so I used bowtie pasta & it worked just fine.
