For Salmon:
1/4 cup whole smoked almonds
2 tsp chili powder
2 tsp paprika
1 tsp garlic pepper
For Sauce:
1/4 cup real maple syrup
1 TB soy sauce
Crush almonds in a ziplock bag until the size of crumbs. Add the rest of the spices to the mixture & shake to mix. Place salmon in bag & coat well with mixture.
Brown both sides of the salmon in a pan coated with olive oil. Then turn down heat and put on a lid. Let it slowly steam until done.
Remove salmon from the pan. Add the 2 ingredients for the sauce into that same pan (there should be some scattered left over almonds and that's fine). Simmer 1-2 minutes until sauce begins to thicken. Drizzle the syrup over the salmon.
**I like to serve this with rice pilaf and green vegetables (boiled broccoli stalks or chopped asparagus & snow peas)**
