Peach Cobbler

We LOVE Dutch Oven Peach Cobbler around here, but it's not always the most convenient thing to get out the dutch oven, heat up some coals, and cook like we're camping. Last night we had some friends over and I decided to try it in the oven. It turned out DELICIOUS... and my house smelled wonderful. Here's the recipe - if you've every made dutch oven peach cobbler you'll already be a pro:

1 yellow cake mix
1 1/2 large cans of peaches
1 stick butter
cinnamon

Grease 9x13 baking dish. Pour in 1 full can of peaches and syrup - then add half the peaches from the second can. Cut into bite size pieces. (I just used enough peaches to cover the bottom of the pan.) Sprinkle cinnamon over peaches. Pour yellow cake mix over top (dry, straight from the box). Cut butter into slices and place on top of cake mix. Sprinkle cinnamon over top. Bake covered at 350 degrees for about 45 minutes. Then un-cover and bake an additional 5 minutes.

Serve hot with vanilla ice cream.
